  2. Get Olive oil
  3. Prepare Fresh parsley

  6. Get Salt to taste for salad (the octopus doesn't need it)

This recipe cooks the octopus slowly to make it really tender, and grills it to give it charred, crispy.   1. Wash octopus. Chop off the tentacles. Save the head and body to make a lovely stock for any fish recipe. Bring a pot of water to the boil. Gently dip the tentacles into and out of the water 3-4 times. then leave in and simmer on low for 15 mins. Switch off and leave them in the water for at least 30 mins
  2. After 30 mins, transfer to a plate. Make a dressing of olive oil, parsley and lemon. Drizzle all over the octopus and leave to marinate for an hour in the fridge
  3. Heat up a griddle pan. When nice and hot, at least medium to high heat, cook for 4-5 minutes each side, no more. Serve with salad and lemon 😄😄😄😄

To grill the octopus, heat a well-oiled grill to medium-high to high heat. Once hot, place tentacles on the grill.
