Pumpkin compote, or "doce de abóbora" in Portuguese. In this recipe, pumpkin and sugar are slowly cooked on the stovetop. Some people add coconut to the mix, but I prefer the basic version.

The ingredients needed to make Pumpkin Compote:
  1. Prepare 1 kg pumpkin, peeled and cut into pieces.
  2. Make ready 700 grams granulated sugar
  3. Make ready 1 cinnamon stick, (I added 2 sticks)
  4. Make ready 1 tsp Orange peel, grated
  5. Take 1 tsp vanilla extract

Improved metabolic processes in the body, the heart muscle begins to work better. We wash the pumpkin under running water, wipe it dry with a towel. With a knife, peel the pumpkin, then cut it in half and remove the seeds and the fibrous part with a spoon. One of our traditional pumpkin recipes is this Pumpkin Coconut Compote that we call "Doce de Abóbora com Coco"; which, if translated literally, would be Pumpkin and Coconut Sweet.

Instructions to make Pumpkin Compote:
  1. Cook the pumpkin in water for around 30 to 40 minutes. You want it soft enough to be able to mash it.
  2. When cooked drain the pumpkin in a sieve for a good while. Then mash well making sure there is no lumps.
  3. Add the mashed pumpkin back into the sieve. The pumpkin will hold a lot of water so you want to lose as much of that water as possible. I used a good amount of kitchen roll to squeeze some of the water out of the pumpkin.
  4. On a medium to low heat, In the same pan used to boil the pumpkin, add all the above ingredients including the mashed pumpkin.
  5. Simmer for about 20-25 minutes. Stirring regularly ensuring it's not sticking to the bottom.
  6. When it's cooked through remove the cinnamon sticks
  7. Transfer the compote to a sterilised glass jar, leave the lid off until its completely cooled off.
  8. Seal and store upto 1 month in a cool dry place.

However, I've decided that Compote is more appropriate. Compote is a french dessert made of whole or pieces of fruit in sugar syrup. For pumpkin compote fit only clean vegetables, well washed and cut into pieces. Slicing a pumpkin, try to make you get uniform, the same size cubes. Such kompotik will be more pleasant to look.
