  19. Get 2 inch turmeric

Normally I like to use full-fat coconut milk to add a creaminess to curries. For this recipe, I decided to use just the coconut cream part. Just using the coconut cream, makes this curry extra creamy and luxurious.. A spicy vegan pulled jackfruit curry that's perfect served with brown rice for a nourishing and different dinner.

Steps to make JACKFRUIT and LAMB CURRY:
  1. Cook jackfruit in boiling water about 15 minutes or tender. Drain. Heat oil in a pot and sauté spice paste, star anise, cardamom pods, bay leaves, and kaffir lime leaves until fragrant, about 5 minutes. - - Add the lamb shank and cook until tender add jackfruit and toss until well combined and the jackfruit looks wilted.
  2. Pour coconut milk and add the asam kandis (I skip this Ingrediants, because I don't have), season with salt and sugar, and bring to a boil. Reduce heat and simmer for 30 minute until the lamb shank is really tender and jackfruit is really soft. Adjust salt and sugar as needed. Turn off heat and serve immediately with rice cake or white rice or bread or roti.

I like to let the jackfruit cook in the sauce and shred. If you want more chunks or texture, add the jackfruit at the end along with the coconut cream and peas until just heated through. Uncover and shred the jackfruit a bit, then allow the sauce to thicken. Add the coconut cream and a little water if necessary. Bubble the curry down until it is nice and thick.
