Instructions to make Fruit tarte:
- FOR THE BASE : Cut the butter into small pieces in a bowl.Add the icing sugar,the flour and the egg and knead until a smooth dough is created.Let the dough rest for about 30'.
- After 30',roll out the dough to 3mm of thickness.Cut,then, with the molds for tarts (8mm diameter) 10 round bases.
- Put non- stick paper on a large baking tray and place all of the 10 molds on it.Place then the round dough bases inside the molds.Cut strips of dough and place them carefully around the base attached on the walls of each mold.Cut the leftover of the dough with a knife.Finally,pierce each base with fork and bake them in a preheated oven,first for 15' at 180°C and then for 10' at 160°C,until the tarts turns golden brown.Allow,then to cool and demould carefully.
- FOR THE CREME: Cut the vanilla pod in the middle and remove the seeds with a knife.In a saucepan put the milk,the vanilla pod and the seeds together and heat it over medium heat.
- In another small saucepan,mix the flour,the sugar and the eggs.Before the milk boils,add the hot milk to the egg mixture and stir over medium heat.Pour in the remaining milk and continue stirring with the whisk.Once the cream has set and started to boil,remove from the heat,add the butter and swirl.
- Put the creme in a clean container,cover it with cling film and place it in the refrigerator.
- FOR THE LIME SYRUP:Cut a lime peel into small strips and get the lime juice of one lime.In a saucepan place the lime peel,the sugar and the water and bring it to boil,over medium heat,without stirring at all.Once it boils,turn down the heat and let it boil for another 8',until slightly thickened.Then,add the lime juice,stir and let it cool well.
- FOR THE GELEE:Put the gelatin into cold water,until it softens.Once softened,boil it with 100ml water 50gr sugar.Let it boil for 5'.Then let it cool,till it does not thicken completely.
- ASSEMBLING:Spread with a brush each tart with lime syrup.Then fill each tart with the cream and cover its surface with a variety of fresh fruits of your choice.Finally,spread again with a brush the fruits wirh the gelle.
Lightly brush the fruit to glaze. To serve, place the tarts on a cake stand and dust with icing sugar, and garnish with mint tips or pistachios.
