The ingredients needed to make Fruit Loaf:
- Make ready 12 oz Dried fruit (mixed fruit or any dried fruit & citrus peel)
- Make ready 1/4 pint boiling water
- Get 1 tsp orange essence
- Make ready 1 large egg
- Take 2 oz Demerara Sugar plus a sprinkling
- Take 6 oz Self Raising Flour
As my parents ran a bakery when I was a child, there was always a loaf of fresh bread at home at breakfast, still warm from the oven. The reason this loaf takes so long to rise/doesn't rise is the method is really NOT allowing the yeast to do its work. Really easy even for a novice like me. For a bit of variation I ice the top with a simple vanilla icing.
Instructions to make Fruit Loaf:
- Put fruit(&peel) in large mixing bowl. Pour on boiling water and add orange essence. Mix through. Leave to soak minimum 30mins upto 2 hours.
- Preheat oven 160°fan. Line 2lb loaf tin. I use liners, saves time.
- Add sugar and beaten egg to fruit. Mix through. Add flour, mix through. Add to tin and level top. Sprinkle with Demerara sugar. Cook for 50mins. Test with skewer should come out clean.
- Leave in tin for about 10mins. I leave the liner on the loaf. When cool wrap in foil. Will keep for about a week. Good as it is or with butter.
Put the fruit pulp, water, sugar and butter into a large saucepan and bring to a boil. Lightly beat the egg and quickly stir it through the fruit mixture. This Everyday Fruit Cake, cooked in a loaf tin, is almost apologetically easy. Just weigh, stir and cook, which is just as well for me because it's in great demand in our house. For special occasions, I will make something that takes more effort but, for everyday eating, this cake is perfect - tasty, quick and easy.
