Saag paneer is a classic Indian dish of cooked spinach studded with cubes of fried paneer cheese. Thickened with cream or coconut milk, it's a hearty and filling vegetarian meal. Fry another minute or so, and then remove the paneer from the pan onto a plate.

The ingredients needed to make Saag paneer:
  1. Take 200 g paneer (or make your own)
  2. Make ready 2 handfuls spinach (also works with kale)
  3. Prepare 2 shallots
  4. Make ready 2 cloves garlic
  5. Get 1 thumb size piece of ginger
  6. Get 1 red chilli
  7. Prepare 2 tsp chilli powder
  8. Take 1 tsp tumeric
  9. Make ready 100 ml coconut milk

Saag just means greens in Hindi, and though spinach is usually used in the U. S., in India saag paneer is also made with mustard, collard, fenugreek, or beet greens, and even amaranth or purslane. Saag paneer (my mom made it with mixed greens mustard/spinach/other greens) is a bit earthier.

Steps to make Saag paneer:
  1. Finely chop the shallots, garlic, ginger and chilli. Add the chilli powder and turmeric and blend with a hand blender.
  2. Slice the paneer into cubes and brown on all sides in some nut oil
  3. Remove the paneer from the pan and add the blended paste. Stir until it darkens.
  4. Add the paneer and coconut milk
  5. Then add the spinach and reduce
  6. This goes great with any of my curry recipes. Don’t forget the chapati and mango chutney

This was bright, tangy, and the briny feta just made this so delicious. Melt the ghee, whisk in with the turmeric and chilli powder, then add the cubed paneer and toss well. Saag Paneer or Palak Paneer or Indian creamed spinach and paneer curry, no matter what I call it, it is a delicious and easy spinach and Indian cheese main course curry which I always order in one of my favorite Indian restaurant! Add the paneer cubes and shallow fry for a few minutes, turning frequently until golden brown. Remove with a slotted spoon and transfer to a bowl or plate lined with kitchen paper.
