The green exterior of kuih dadar is made of batter colored with natural pandan juice extracted from pandan leaves. For the filling, combine the palm sugar and water in a small saucepan. Kueh dadar is a sweetened, rolled-up coconut pancake that's commonly found as a snack in Southeast Asia. In fact, it's known by many names in the region: kueh katayap, dadar gulung, kueh langgang.
Steps to make Kueh Dadar(Malaysian Stuffed Pancake):
- Roughly chop the pandan leaves
- Blend using some water
- Sieve it to obtain a clear solution and keep aside
- For batter: combine all the batter ingredients
- Whisk well until lumpfree
- Rest for 15 minutes
- Shave the guala malaka meanwhile to be used for stuffing
- Stuffing: sauté the stuffing ingredients on Low heat until the guala malaka melts
- Once well combined, take off heat and discard the leaf
- Making pancakes: add a laddleful of batter on a pan after lightly greasing the pan
- Cook both sides as a normal pancake
- To finish, add a tablespoon of the stuffing on the pancakes.
- Seal and roll them well and serve right away
