Grilled courgette slices with almonds and Parmesan. Lightly oil a grill pan and batch fry thin slices of courgette until almost tender. Arrange them in a bowl, then scatter a handful of chopped almonds, a generous grating of Parmesan and some chopped basil over them. Add the grated courgettes and peas and stir to coat in the butter.
Instructions to make Pea and Courgetti noodles:
- Heat a little oil in a pan. When hot add the courgette noodles and stir fry for 2 minutes. Add the chilli and garlic and stir fir a minute. Add the remaining vegetables.
- Add the chilli, chopped mint, soy sauce and a good squeeze of lemon or lime. Serve with a wedge of lemon or lime.
Add the stock and bring to the boil until peas are tender. Add mint to the pan together with the crème fraîche. I used a spiralizer to make carrot and courgette noodles and Finn was a great helper. I just love this little machine and it's a great way to add veg to your kids meals. In Canada we basically added a couple of heaped tablespoons of peanut butter and stirred it through our noodles..
