The ingredients needed to make Gobhi Samosa:
- Prepare 2 cups cauliflower chopped
- Make ready 2 medium sized potatoes cut into small cubes
- Prepare 2 tablespoon peanuts
- Get 1 teaspoon panch phoran
- Take 1 dry red chilli
- Make ready 1.5 inch ginger crushed
- Prepare 2 green chillies crushed
- Get 1/2 teaspoon turmeric powder
- Prepare Salt as required
- Make ready Sugar as required
- Make ready 3 cups all purpose flour/maida
- Make ready Vegetable oil as required
A perfect samosa has a crisp exterior made of flour and savory potato filling inside. But most of us love the rustic samosa available on streets. Cone pastry stuffed with a blend of herbs and spices, mixed with your choice of topping and deep-fried in vegetable oil. Served with house special tamarind and mint/cilantro chutney.
Instructions to make Gobhi Samosa:
- Heat a pan and dry roast the panch phoran and dry red chilli. Crush them together. Keep it aside.
- Heat some oil and add the peanuts. Fry them for a while and keep it aside.
- In the same pan, add the cauliflower and little bit of salt. Fry them till light brown in colour. Keep it aside.
- Add the potatoes and fry them for a while. Add some salt and again saute for a while.
- Add the fried cauliflower, dry roasted masala, crushed ginger and green chillies. Mix it well. Add the peanuts.
- Add half cup of water and cover it for a while.
- Wait till the oil dries up. Add some sugar to balance the salt. Mix it well and remove it from the flame.
- Wait till the stuffing cools down.
- In a bowl, add the maida, 1/2 teaspoon salt, 1/2 cup oil.
- Mix it well. Add cold water little by little and mix it very well.
- Note that it must be a very tight dough.
- Cover the dough with a moist cloth for atleast 30mins.
- Uncover the batter and make some small balls out of it.
- Flatten the balls and add the stuffing in it. Fold it like a samosa, or as given in the picture.
- Heat some oil in a wok. Note that you must heat the oil 70%.
- Add the samosas and fry them in a medium flame. This will make them crunchy. Fry them in till golden brown in colour.
- Serve hot with tea.
