I didn't add salt because pancetta and Parmesan are quite salty. They'll keep for a day or two or you can freeze. In a frying pan cook the pancetta until it goes crispy. In a jug beat the milk and the two eggs together and then add it to the mixture.

Instructions to make Parmesan and pancetta scones:
  1. Mix flour and baking powder. Add butter and rub with fingers to get breadcrumb texture. Set a side
  2. Cook pancetta, no oil, drain and set a side
  3. Mix egg, milk and oil with a fork
  4. Gently add egg mix until you get a sticky consistency. Add pancetta and Parmesan. Mix again
  5. Lightly grease a muffin tray. Spoon mixture in evenly. Bake at 180 for about 20-25 mins. Check they're cooked using a fork, if it comes out clean, they're ready
  6. Yummy!

With a wooden spoon pull the mixture together until it forms a soft dough. Everyone likes scones, fruit or cheese, they are perfect at the tea table.
