Instructions to make Plum Jam:
  1. Slice and de-seed the plums. Add to a large saucepan. Add the water and sugar to the plums and place on a high heat.
  2. Leave the mixture to boil on a high heat, stirring occasionally. (add more sugar or lemon juice to taste)
  3. Keep on the boil until reduce by half. It should be a reasonably thick consistency (jam like). Once at the desired consistency take off the heat and allow to cool for 10-15 mins.
  4. There is lots of information about sterilising and sealing Jam jars on the web. Without sterilisation and sealing I find the jam will last in the fridge for about 3 weeks. Add the Jam from the pan to the jam jars. Leave to cool. Once cool keep in the fridge.

If the jam is not sinking back to the bottom, the jam probably was thicker and this can be due to a variety of factors such as cooking time (reducing down the jam longer would make it thicker, or using a plum that releases less juice).
