  6. Take Handful chopped coriander
  7. Get 2 tsp brown palm sugar
  8. Take Juice of 1 lime or 1tsp tamarind paste

  10. Get 1 tbsp oil
  11. Take 1/4 cup water

You can use the bitter gourd seeds in stuffing. You can also cut bitter gourd half or small size and fill the stuffing. As shown below but do not slit in middle, masala will come out while frying. One of the best ways to use bitter gourd in your meals.

Instructions to make Bitter gourd with peanut stuffing:
  1. Clean and cut bitter gourd in half, rub salt generously and set aside for 15 minutes, lightly rinse under running tap and gently squeeze off excess liquid
  2. In a hot skillet on medium heat, add oil, onions, saute until translucent about 8 minutes, add chilli, garlic ginger paste and salt as per taste and saute for a few minutes more, add coriander, sugar, peanuts and tamarind and mix well until the mixture is warmed through, turn heat off and let it cool
  3. Stuff bitter gourd with stuffing
  4. In the same skillet place bitter gourd, pour in 1/4 cup of water, bring to a boil, turn heat on low and leave to cook for 15 minutes, turn heat off and let it rest for 10 minutes before serving, serve as a side with main meal or with a lentil salad, enjoy!
