  8. Place in the preheated oven for 10 minutes. Remove from the oven and use the back of the fork to crush the potatoes a little
  9. Put the baking tray back in the oven and cook for 20 more minutes (total cooking time 30 minutes)
  10. Remove from the oven and plate adding spinach and some caramelised onion hummus

Place all other ingredients including the caramelized onions into food processor. Cook, stirring frequently until the onion starts to brown then. Egg, hash browns, roasted red pepper, spinach, green chilies, pepper jack cheese & hummus. spinach, caramelized red onion, tomato, smoked . Scrub potatoes and cut into bite-size pieces. Drain well and add to a salad bowl.
