Add the lamb steaks and rub the mixture into them. Set aside while you prepare the vegetables. Return the lamb to the pan and add the Worcestershire sauce, tomato purée, mint and a splash of water. Cook for a few minutes; check seasoning. Place lamb on a roasting rack set on a rimmed baking sheet; place in oven.
