  2. Pour oil into a shallow pan until it covers the bottom - Place on a medium heat for a couple of minutes - Add the prawns and cook for 2-3 minutes each side or until golden - Serve with a sweet chilli dipping sauce

Dip the prawns first in the flour, then the beaten egg and finally toss in the coconut mix until evenly coated. To make the dipping sauce, place the cordial, chilli and rice wine vinegar in a small saucepan, bring to the boil, simmer until reduced a little and syrupy. Roll the prawn in the coconut crumbs, pressing down so the mixture sticks. Put the prawn on the prepared tray and repeat until all are coated, leaving space between each one. Fry the coconut shrimp in batches - do not crowd them in the pan.
