- Take 2 cups plain flour
- Take 1 cup powdered milk
- Prepare 1/2 cup sugar

- Prepare Pinch yellow food colouring
- Prepare 2 Tbs ghee or butter
- Make ready 1 tsp ground cardamom
- Make ready 1 Tbs fennel seeds - coarsely ground
- Prepare 2 Tbs desiccated coconut
- Take Tepid water to make the dough
- Make ready Oil for deep frying
- Take Almond and raisins chopped - optional
Great recipe for Dhal fritters "Gato piment". One of the most popular street food in Mauritius. When the word 'gato piment" is mentioned, the taste buds starts to sing. Made with dhal, spices and chilli makes these the perfect all day snack.
Steps to make "Tekwa Dal" - Sweet Puri filled with Dhal:
- Soak the dhal then boil until soft. I usually boil it in a pressure cooker, 2 whistles and turn the heat off.
- Drain the boiled dhal. Keep the water to make the flour dough.
- The dhal should be soft enough to be crushed between two fingers.
- Remove from heat and cool slightly.
- Place in a blender and grind the dhal to a soft texture.
- Place a little ghee in a pan, heat up then add the ground dhal. Heat it up few minutes only to remove extra moisture.
- Remove and leave to cool down.
- Meanwhile prepare the dough. In a mixing bowl add the flour, ghee, sugar, milk powder, bicarbonate soda and yellow food colouring.,
- Mix all until fully incorporated.
- Make a well in the centre start adding the warm tepid water gradually to form a fairly soft dough.
- Cover with clingfilm and leave the dough to rest for at least 30 minutes.
- Once the dhal has cool down, time to turn it into a sweet filling for the dough.
- Add in the fennel, cardamom, coconut, almond flakes, give all a good mix.
- Lastly add in 2 Tbs sugar.
- Divide dough into 10 equal sized portions, shape each into a cup shape before you start filling.
- Place 1 tablespoon of filling in each and pinch them closed. Keep on a lightly floured surface.
- Roll out into discs of about 10cm diameter. Be careful not to let the filling ooze when rolling.
- Heat oil in a deep frying pan and deep fry tekwa in moderately hot oil until golden brown.
- Drain well on absorbent paper and serve hot with a fresh cup of tea. Makes 10.
