  1. Preheat the oven to 220c (240c if no fan)
  2. Mix 150ml of the water with the yeast until all of the yeast is dissolved. Set aside for 10min
  3. Meanwhile whisk together the flour, salt, and pepper
  4. Pour the olive oil into the yeast mixture and mix well
  5. Make a well in the centre of the dry ingredients and pour the yeast mixture into it. Mix it to form a slightly sticky and soft dough. Add the remaining 100ml water in until it feels the right consistency (should be soft but not too sticky). If it's too sticky, add an extra sprinkle of flour.
  6. Place the dough on a lightly floured surface. With floured hands knead the dough for 10min until the right consistency.
  7. Lightly oil a large bowl - it should be big enough to allow the dough to double in size. Put the dough inside and cover with cling film. Set aside in a warm place for 1-2 hours
  8. Meanwhile make the pizza base. Combine all ingredients for the base in a large sauce pot on the stove. Let it heat until it begins to boil, and then simmer it for 10min. Take it off the heat and let it cool.
  9. When the dough has doubled in size, remove the cling film and place the dough on a floured surface to knead again until smooth. Divide into two round balls and let the dough rest before shaping.
  10. Lightly flour the dough and surface and work the pizza until it's nice and thin.
  11. Using a ladle, spread the base on the pizza and place whichever toppings you'd like! This pizza had some mozzarella, basil, pesto, and an egg! I also love a good pineapple and Parma ham topping :) enjoy!
