The ingredients needed to make Congee/Porridge:

Congee can be cooked in a large soup pot or, for an easier way, in a rice cooker or instant pot. Most of the instant pot and rice cooker has a congee mode. Clay pot is often used to make Cantonese rice porridge. Congee can be also made with leftover rice, which can greatly shorten the time.
Instructions to make Congee/Porridge:
- Porridge powder preparation: Take 1 cup (250 gms) of parboiled rice a.k.a. idly rice and dry roast it on low-medium flame till it turns light brown. Once it starts to change color, turn off and transfer it to a pan to cool down to room temperature. [A couple of them may pop. Not to worry.]
- Now take the rice in a blender and grind it coarsely. Transfer to an air tight container for storage.
- When needed, place a vessel on the stove and add about 1.5 cups of water - preferably boiled water to help speed up the process - turn on to medium. Now mix in 2 tablespoons of the porridge powder and ensure that there are no lumps.
- Let it boil for 5 minutes covered. Add salt and black pepper powder to taste. These are optional, though. [You may also stick to adding only sugar if you want it sweetened. If the fever or cold is doubted to be because of body heat/dry weather, you can add 1/2 cup of plain yogurt.] Once it starts to boil, turn off and serve.
- Tip: Ensure that the porridge stays hot or it will start caking. Since we are use rice; the carb level will be different than usual. Remember that when adhering to a meal plan. Disclaimer: it is not a medical diagnosis/medicine. This is vegan equivalent to chicken soup.
