We just kept the rest in the fridge and have been using it on everything from grilled chicken to haystacks to green beans to brown rice! I kind of love barbecue sauce…. Ina small bow, mix together the tomato sauce, tomato paste, vinegar, Worcestershire, liquid smoke, and sweetener if using and then pour evenly over the ribs. A great rib sauce should cook on the ribs, low and slow so that it can sink into the pores of the meat and create a sticky crust on the surface.
Steps to make Mama’s rib sauce:
- Firstly, only the sugar, tomato puree and vinegar are actually essential, all the other ingredients are up to your own taste buds !
- Tablespoon of cornflour mixed with the sugar
- Chuck all together and add some water into the mixture - until it all stirred up together, but not too much as you don't want it watery and you can always add more water if you like
- Roll the pork ribs or chicken wings, - Leave to marinate for as long as possible overnight, - Not essential but more tasty - Cook at a medium temperature. Xxxxxxxxxxx
That's the case with this sauce, made on a base of ketchup and flavored with sugar, spices and liquid smoke for a true BBQ taste. Pour and scrape it all into the simmering sauce. I keep mine only half way covered, so it cooks down and gets thick and rich. Remove pepperoni, chicken and ribs if used. Remove meat from bones of chicken and ribs and add back to sauce in small shreds.
