If you can't find papaya in your market, ripe mango would work too. These Papaya Pecan Coconut Muffins are so moist and tender, so easy to make and have NO butter or dairy in them. Place muffin cases into a standard muffin tin and spoon a heaped tablespoon of mixture into each one. Combine wet ingredients: Mix wet ingredients (mashed banana, egg, oil, rice malt syrup) in a small mixing bowl.

- Transfer to a wire rack to cool completely. You can serve as-is or frost muffins and serve. Either way Muffins taste delicious
- To make Frosting; in a medium bowl, using an electric mixer, beat cream cheese, icing sugar and vanilla together until creamy. Spread onto cooled muffins. Top with diced papaya and toasted coconut. Serve
Combine dry ingredients: Mix dry ingredients (flour, baking powder, coconut, cinnamon, salt) in a large mixing bowl. Add papaya mixture to flour and coconut bowl and mix well. Place muffin cases into a standard muffin tin and spoon a heaped tablespoon of mixture into each one. Top with extra shredded coconut and finely diced. Cream the sugar with the butter until it is a light yellow color.
