Happy Independence day dear friends and readers. Hope every one of you started to enjoy the long weekend. I was planning for tricolour recipes from last week. Because of lack of time, I made this simple and yet interesting custard recipe.

Instructions to make Tricolour pudding:
  1. In a bowl add water and soak china grass for 10 minutes. - In a pan take 300 ml water and add china grass and cook until china grass dissolves. Add 3 tablespoon sugar and mix add 3 tablespoon orange squash and remove and transfer in a mould and let it set in the fridge until set.
  2. For white pudding - Soak china grass for 10 minutes - In a pan bring the milk to boil and add sugar. Remove from gas and boil the soaked china grass until it is dissolved. Add to the boil milk and pour slowly on top of the orange layer. Let it set in the fridge.
  3. For green pudding - Repeat as per orange and pour it on top of white pudding. Let it set in the fridge. - Remove and transfer on serving plate.

I made this with Kiwi, Banana and orange to bring the tricolour of the Indian flag. The Indian flag is a horizontal tricolour of "deep saffron" at the top, "white" in the middle, and "green" at the bottom. In the centre features a navy blue wheel with twenty-four spokes, known as the Ashoka Chakra, taken from the Lion Capital of Asoka erected atop Ashoka pillar at Sarnath. Why not bring those colours into a sandwich, to create the same josh in your taste-buds. A green layer of minty paneer and an orange layer of creamy carrots also complement each other well in taste.
