  8. Take 1 cup freshly shredded parmesan cheese
  9. Prepare to taste salt & pepper, dried parsley
  10. Get 2 cups roughly chopped spinach (optional)

In a large pot of boiling water, cook orzo according to the package's directions. Meanwhile, in a large skillet set over medium heat add the butter. Add more milk if necessary to achieve a creamy orzo. Once the orzo is cooked, add black pepper, parmesan cheese, parsley and stir well.

Instructions to make Creamy Parmesan Orzo:
  1. In a large pot with a tight fitting lid, heat the olive oil and butter over med-high heat. Once the butter has melted, add the onion to the pot and cook, stirring often, until translucent, about 3-5 minutes. Stir in the garlic and cook until fragrant, just another minute or so.
  2. Stir in the orzo and let it toast for a couple of minutes. Increase the heat to high and stir in the broth and half & half. Once it reaches a boil, cover the pot with a lid and reduce the heat to med-low. Let this simmer for 5-7 minutes, stirring occasionally, until the liquid has mostly been absorbed by the orzo.
  3. Remove the pot from the heat and immediately stir in the parmesan cheese (and the spinach if using). Then season to taste and serve immediately. Refrigerate any leftovers.

Cook the orzo according to the package directions; drain well. Instead of a cream- or milk-based sauce, this recipe uses grated Parmesan mixed with some of the pasta's starchy cooking water to make a thick, cheesy sauce that coats the orzo. Let the orzo absorb the liquid entirely, then add the rest. Give it a stir, bring to a quick boil and turn the heat down to a simmer.
