Kritharaki (Κριθαράκι), a type of Greek pasta which looks a bit like long-grain rice, is especially good with tomato sauce; or with nuts, nutmeg and peas; or with chicken, or very traditionally as part of a giouvetsi (γιουβέτσι) - casseroled meat to which the pasta is added to cook in the meat juices. Kritharaki is a typical dish made in Cyprus and Greece, that can be eaten on it's own as a main meal with just a side of salad and yoghurt. Otherwise it can be the ideal side to any meat dish.

The ingredients needed to make Kritharaki:
  1. Take 2 tbs Olive oil
  2. Get 1 onion, finely chopped
  3. Take 1 teaspoon lazy garlic, or 1 clove garlic, crushed
  4. Prepare 500 ml carton Passata
  5. Get 1/2 tube tomato puree
  6. Prepare 1 teaspoon each, thyme, oregano,chilli flakes
  7. Prepare 1 teaspoon sugar
  8. Take 500 ml cold water
  9. Make ready 500 gm Orzo
  10. Get Salt & Pepper

It is a dish of meat (usually lamb or veal) accompanied by some sort of pasta and cooked in the oven. It was often made on Sundays, to be eaten after church. Well you might wonder, who stayed at home watching the oven? Fry the chopped onions and pressed garlic in preheated oil.

Instructions to make Kritharaki:
  1. In a large saucepan Gently fry the onion and garlic in the Olive oil until transparent but not coloured.
  2. Add Pasata, herbs, chilli flakes and sugar, stir gently.
  3. Add water and tomato puree, stir again, add Orzo, stir, bring to boil, cover with lid, reduce to gentle simmer.
  4. Cook for 15-20miutes, stir occasionally. Check Orzo is cooked.
  5. Remove from heat, allow to stand for 5 minutes, do not remove lid.
  6. Stir, sauce should coat back of spoon. Season with salt and pepper(to taste) Serve with Greek bread.

When soft, add the tomatoes and broth. Season the sauce with salt, black pepper and oregano. In a medium bowl combine meat with finely chopped carrot, egg white, whole grain bread crumb and the half of oregano, salt and pepper. Orzo is traditionally made from white flour, but it can also be made of whole grain.
