The ingredients needed to make Jali samosa:
  1. Get 2 cup All-purpose flour / maida
  2. Prepare 1/4 cup Clarified butter / ghee
  3. Get 1 pinch Carom seeds
  4. Take 1 pinch Onion seeds
  5. Get to taste Salt
  6. Get As needed Oil for frying
  7. Make ready For stuffing
  8. Take 4 Boiled potatoes
  9. Get 4-5 Chopped cashew nuts
  10. Get 1 tbsp Raisins
  11. Make ready 1/4 tsp Chopped green chilli
  12. Take 1/2 tsp Red chilli powder
  13. Take 1 tsp Coriander powder
  14. Take 1/4 tsp Turmeric powder
  15. Make ready 1 tsp Ginger garlic paste
  16. Take 1/2 tsp Roasted cumin seeds powder
  17. Take to taste Salt
  18. Take 1/4 Tsp Fenugreek seeds
  19. Get 1 tbsp Chopped coriander leaves

I was hoping to get the taste of the samosas that I had some years ago but using this recipe didn't do it. Deep fry the samosas on low to medium heat until light brown. Serve with tomato sauce or any chutney you love. Samosas are one of the few Indian fried treats that I just can't get enough of.

Steps to make Jali samosa:
  1. Take all-purpose flour/maida,clarified butter,carom seeds,onion seeds and salt and mix well.
  2. Make a crumb like texture.
  3. Knead a soft dough and keep aside for 30 mins.
  4. Boil potatoes and peel and crush them.
  5. Heat 2 tbsp oil in a pan.
  6. Add fenugreek seeds to crackle.
  7. Then add ginger garlic paste,green chilli,coriander powder,red chilli powder and turmeric powder and mix well.
  8. Add boiled and crushed potatoes,salt and roasted cumin seeds powder and saute for one mins
  9. Don`t mash the potato completely just crumble it with hand.
  10. Add cashew nuts and raisins and mix well.
  11. Add coriander leaves and mix well.
  12. Now stuffing is ready.
  13. Let it cool.
  14. Now roll a small dough just like chapati.
  15. Cut it in two halves.
  16. Make cuts in one half,apply maida paste on all sides and cover with other half
  17. Apply water to half of cut shape it cones press it.
  18. Stuff the potato filling.
  19. Seal the edges of samosa.
  20. Heat enough oil in a pan.
  21. Place the samosa,lower the heat and fry till light brown.
  22. Serve hot jali samosa with tea.
