- Grate the boiled and peeled potatoes. Heat 1 tsp oil in a pan. Add hing and cumin seed. When it's crackled add chopped ginger and green chilli and saute a second.
- Add Turmeric powder,garam masala powder,Red chilli powder and Aamchur powder and mix everything well. Add grated potatoes and salt and cook it for a minutes. Add green Coriander leaves and mix. Remove from heat and keep aside for cool down
- In a bowl sift all-purpose flour,1/2 tsp Salt and 4 tsp oil and make a soft dough(like samosa) adding with sufficient water. Cover and keep aside for 5 minutes. In a bowl add 1 tbsp all-purpose flour and mix sufficient water and make paste.
- Now make 2 types of ball from the dough. Make some medium sized balls and some small sized ball. Make poori from both the balls.in a medium sized poori fill some potatoes stuffing.Cover and give the guzia shape. Again fold it and shape it like this. Sealed both corner with a little flour paste.
- In small sized poori also fill some stuffing and make round ball and give them duck mouth like(चोंच).Make all like this. Add 2 black pepper corn in some distance in round shape ball. This is the eyes of duck.and the big balls are the stomach of duck.
- Now make 1/2 inch pieces from tooth pick. Dip one piece of tooth pick in flour paste and stuck one side of tooth pick in back of the eyes and another side of tooth pick stuck in stomach of the duck.make all ducks like this.
- Now heat oil in a kadhai and fry prepared ducks. Fry 3-4 ducks at a time on low flame. Fry till they turn golden brown in colour. Fry all the duck samosa like this. Remove from heat and keep it in paper napkins. Serve hot with tomato ketchup or green chutney.
