Steps to make Salmon Pesto:
- Place handful of trimmed beans onto grease proof paper do this for each person add olive oil, salt and pepper
- Place skinless salmon nice side up on top of the green beans
- Use one tablespoon of pesto per portion to cover fish and place halved tomatoes on top and around sides
- Fold grease proof paper over fish and make a parcel and place on baking tray. Cook in oven at 180oC for 20 to 25 mins
- Undo parcel and serve and enjoy. We had sauteed potatoes with ours.
