  1. Take 250 gr spaghetti
  2. Prepare 2 courgettes (diced)
  3. Get 2 medium carrots (julienned or diced)
  4. Take 4 small sausages (around 50g) (chopped)
  5. Get 2 medium eggs
  6. Prepare 1 vegetable stock cube
  7. Prepare 1 medium onion (chopped)
  8. Get 3-4 cloves garlic (chopped)
  9. Take 2 tbsp vegetable oil
  10. Take salt (to taste)

  12. Prepare coriander (to taste, I think 2 tsp?)
  13. Prepare sweet soy sauce (to taste, I think 2 tbsp? You can replace with soy sauce + brown/demerara sugar)
  14. Take oyster sauce (to taste, I think 1 tbsp? You can replace it with mushroom sauce)
  15. Take shrimp paste (1 tbsp, adjust for stronger/ less. Skip if you don't have this.)
  16. Take ketchup (I sometime add this, but this batch I don't)

Broccoli, cauliflower and carrots are added to a savory stir fry of garlic, onion and chicken, with dashes of soy sauce to season the mix. Cook spaghetti according to the package instruction. While cooking the spaghetti, slice all the vegetables and ham. This stir fried spaghetti recipe is easy, quick and absolutely delicious.

Steps to make Stir-fried spaghetti:
  1. Boil the spaghetti following the instruction written on the package (add salt). Meanwhile, prepare and chop the other ingredients (be careful not to overcook the spaghetti and stir ir once in a while though). I usually mandolin my vegetables, but you can julienne them. Different shapes make the texture better, you can dice some and julienne some. Take the spaghetti off the boiling water after it's cooked. Add some oil to the spaghetti so that it doesn't clump.
  2. Heat oil, add onion and garlic. Stir until change colour. Add shrimp paste (have nice ventilation as it's not everyone's favourite smell). Increase the heat and prepare to stir-fry. Add vegetable stock cube.
  3. Add hard vegetable first (courgette) then carrots. Add the sausages. Keep stir-frying. Crack the two eggs. Add salt and pepper. Check whether the vegetables are in the right consistency before adding spaghetti.
  4. Lastly add the spaghetti, sweet soy sauce and oyster sauce. Stir fry until everything mixed properly. Taste to correct the salt/pepper.
