- Add the dressing ingredients to your blender and blitz until nicely blended - but don’t purée it, a few lumps are fine. Taste it here and adjust with more honey, salt and pepper as you like.
- Chop the salad ingredients. Remove the seeds from the tomatoes before chopping (this stops the salad getting watery). Mix it all together.
- Add the quinoa (check the packet instructions and cook then cool if needed).
- Add the dressing a bit at a time until you get a good coating - don’t do what I did and just tip it all in. It was a bit too much and made it all just slightly too wet.
