Leaving out the sugar will affect the taste slightly, but it should be fine for these quick pickled red onions (in other words, not for canning). Quick-Pickled Onion Tips Slice the onions thinly. You can do this with a sharp chef's knife or a mandoline. Place onion in a jar; pour vinegar mixture over. Place onion a large jar with a tight-fitting lid.
