Steps to make Garlic & Nigella Seed Flatbreads:
- In a large bowl or mixing bowl add in the flour, salt, baking powder, nigella seeds and garlic granules. Mix together to combine.
- Add in 1tbsp quark. Using a silicone spatula or wooden spoon mix together until small clumps are formed. Now add in the other tbsp quark. Using your hands bring together the clumps to form a ball of dough.
- Knead together in the bowl until as smooth as possible. Here, you may need to roll the dough between just your hands until smoother in appearance. Roll into a tidy ball. Now, either wrap in cling film and leave until you want to roll out the flatbreads before cooking or if cooking straight away skip that part.
- Dust a work surface with some flour and also dust flour over the rolling pin. Divide the ball of dough into two equal parts. Roll out each ball into a oval shape that's around 2-3mm thick. Heat up a cast iron skillet or large non stick frying pan up over a medium high heat.
- Once really hot, gently lay in one of the flatbreads into the hot pan. Cook on each side for around 3 minutes or until golden and slightly blistered with brown circles. It may puff up a bit. After cooking each flat bread, mix the crushed garlic clove with the butter then spread it over the top of the flatbreads until melted. Garnish with some chopped fresh parsley. Eat and enjoy! :)
