Pour the rest of the milk into a saucepan. Shell the prawns, reserve the meat, then drop the shells and heads (wash them first if necessary) into the milk along with the thyme sprigs, bay leaves, garlic and a grind of pepper. To assemble the pie, butter a casserole dish generously and flake the set-aside fish, discarding any skin and bones. Lay the fish in the casserole dish and pour about half of the parsley sauce on top (reserve the remainder of the sauce to use as a pouring sauce on the finished pie).

- On a very low heat return potatoes, add plenty of butter, a good glut of milk and lots of Parmesan and white pepper and mash mash mash.
- Top the mash onto the fish in a very rustic way. Once on top grate more Parmesan on top and pop in the oven for about 40 mins at 180.
- Serve with salted buttered green beans and enjoy ๐
Make the mash for the topping first. Slice the fish into strips then place in an earthenware dish with the spinach and eggs and mix together, pouring over the creamy vegetable sauce. The cooked potatoes should be drained and mashed - add a bit of oil, sea salt, black pepper and a touch of nutmeg (if using). Spread on top of the fish. Assemble the pie, then cover tightly with a double thickness of foil.
