  5. Use pastry scraps to make a border. Glaze with the egg and bake at 180 for about 35-40 mins. Leave on a wire rack to cool for 10 mins before serving

Turn up the heat and cook until the potatoes are tender, stirring from time to time. Finely grate potatoes by hand or possibly in processor fitted with grating disk.
