  6. Transfer to the oven and cook for 30-60 minutes. Note: you may need to add more olive oil during cooking. The potatoes may only take 30 minutes to cook so after the 30 minute mark keep checking on them every 10 minutes or so.
  7. Baste with the olive oil occasionally. Ensure that the potatoes are not sticking to the bottom of the tray.

Be sure to dry them well before you add the olive oil so they roast instead of steam!! Preheat the oven to a very hot temperature. Add olive oil, seasonings, and herbs (per recipe below) and roast until tender. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Let potatoes cool slightly, then use a spatula to unstick them.
