- Rinse the karonda well. Place them in a strainer to dry. Wipe with cotton napkin.
- Cut it into two halves. Remove the seeds. Cut each into small pieces.
- Take a clean and dry palte. Make a layer of all above ingredients.
- Starting with salt, mustard powder, turmeric powder,red chilli powder, methi powder and then asafoetida.
- Heat the oil in small pan on low medium flame upto boiling point.
- Switch off the gas. After 2 minutes add the oil in the layer starting with centre. Mix the oil with masala well.
- Pickle masala is ready. Let it cool down completely.
- Now add karonda. Mix well. Store it in glass jar. Stir the pickle once with spoon every day. Pickle is ready. Serve with paratha.
