  11. Shape each piece into a ball and place them in four rows of four in the floured tin
  12. Set oven to 200C/400F
  13. Cover the rolls and rise in a warm place for another 20 minutes
  14. Bake rolls at center of the oven for 25-35 minutes, making sure they are cooked in between the rolls
  15. Remove tin from the oven and immediately brush the tops if the rolls with egg white (this will cook and give a good shine)
  16. Remove rolls to a wire rack and allow to cool at least slightly before eating…
