- Preheat oven to 200 degrees
- Roll out pastry sheet and pinch edges down
- Spread tomato puree across base, leaving an inch clear around the edges
- Sprinkle oregano, parsley and chilli flakes across the puree
- Decorate base with jalapeños, tomatoes and mushroom slices
- Cover with cheese
- Milk /egg wash the edges
- Bake for 10 minutes
- Check on cooking, once the edges start to puff up and turn golden, take out
- Pierce centre if puffing up, to let the air out. Sprinkle tuna across the centre and crack an egg on each side
- Return to the oven for 5 minutes+ until the eggs are cooked
- Season to taste and enjoy!
